Masala Egg Muffins (Indian-Style Egg Cups)

These protein-packed muffins are a desi twist to the classic egg muffin. They’re perfect for breakfast on the go or a quick snack.

Ingredients:

6 organic eggs

1 small onion (finely chopped)

1 tomato (finely chopped)

2 green chilies (optional)

½ freshly chopped spinach

¼ tsp turmeric

½ tsp red chili powder

Salt to taste

Fresh coriander

Method:

Whisk the eggs and mix all the ingredients together.

Pour into a greased muffin tray or silicone cups.

Bake at 180°C for 20–25 minutes.

Store in an airtight container in the fridge for up to 4 days.

 Meal Prep Tip: Make a batch on Sunday and grab one each morning with toast or roti.
